Ingredients:
500g of fish fillets (cod, haddock, or any white fish)
2 tablespoons of vegetable oil
1 onion, finely chopped
2 cloves of garlic, finely chopped
1-inch piece of ginger, finely chopped
1 teaspoon of ground turmeric
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1 teaspoon of paprika
1 teaspoon of chili powder (optional)
400ml of coconut milk
Salt to taste
Fresh coriander leaves to garnish
Step 1: Cut the fish fillets into medium-sized pieces and set aside.
Step 2: Heat the oil in a large pan over medium heat. Add the chopped onion and fry until it turns golden brown.
Step 3: Add the chopped garlic and ginger to the pan and fry for a minute or until the mixture becomes fragrant.
Step 4: Add the turmeric, cumin, coriander, paprika, and chili powder (if using) to the pan and fry for a few seconds.
Step 5: Pour the coconut milk into the pan and stir well to combine the spices with the milk.
Step 6: Add salt to taste and bring the mixture to a boil.
Step 7: Reduce the heat and add the fish fillets to the pan. Gently stir the fish so that it is well coated with the curry sauce.
Step 8: Cover the pan and simmer the fish for about 10-15 minutes or until it is cooked through.
Step 9: Garnish with fresh coriander leaves and serve hot with rice or naan bread.
